2. Vegan Lentil Loaf
Ingredients:
- 1 cup green or brown lentils
- 2 1/2 cups vegetable broth
- 1 cup diced carrots
- 1/2 cup diced onions
- 1/2 cup diced celery
- 1 cup rolled oats
- 1/2 cup ketchup
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions:
- Cook lentils in vegetable broth until tender, about 30 minutes.
- Sauté onions, carrots, and celery until softened.
- Preheat the oven to 375°F (190°C).
- Combine cooked lentils, sautéed vegetables, oats, ketchup, thyme, rosemary, salt, and pepper in a large bowl.
- Place the mixture in a greased loaf pan.
- Bake for 45 minutes until it’s firm and slightly crispy on top.
