2. Vegan Lentil Loaf

Ingredients:

  • 1 cup green or brown lentils
  • 2 1/2 cups vegetable broth
  • 1 cup diced carrots
  • 1/2 cup diced onions
  • 1/2 cup diced celery
  • 1 cup rolled oats
  • 1/2 cup ketchup
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions:

  1. Cook lentils in vegetable broth until tender, about 30 minutes.
  2. Sauté onions, carrots, and celery until softened.
  3. Preheat the oven to 375°F (190°C).
  4. Combine cooked lentils, sautéed vegetables, oats, ketchup, thyme, rosemary, salt, and pepper in a large bowl.
  5. Place the mixture in a greased loaf pan.
  6. Bake for 45 minutes until it’s firm and slightly crispy on top.
